The grapes for this wine were harvested from a steep hillside vineyard located about 4 miles west of Highway 101, just off of Highway 46. The harvest date was October 18th with a sugar of 27.4 degrees Brix, a TA of .63mg/100ml, and a pH of 3.44. The fermentation was seven days in a small stainless tank using Syrah yeast and pumped over for minutes, 6 times per day. The wine was aged in new and once used French and American oak barrels for 17 months and bottled on March 11, 2008. The color is garnet-red, with aromas of Bing cherries, ripe raspberries, crushed dried flowers and sage spice. Ripe, spicy, and lively on the palate, with flavors of cherry, plum fruit, and cocoa. Rich and full flavored on the palate. Tannins are medium and fine-grained. Zinfandel 92% Appellation: Paso Robles 100% 261 cases made |
